WRL mushrooms! A Green Team initiative

Did you know that something unusual is growing at the UNSW Water Research Laboratory in Sydney?

As part of the UNSW Green Impact 2020 initiative, our WRL Green Team recently won a grant to kick-off our ‘Gourmet mushrooms from coffee waste’ sustainability initiative. 

The idea is simple: Instead of disposing of our used coffee grounds, we use them to grow edible gourmet mushrooms directly on our site. These are then sold to the WRL community for less than half the price of supermarkets. The earnings are then reinvested to sustain and grow the project.

A truly sustainable and circular local food initiative!



So far we’ve been growing several kilos of Shitake, Oyster and Coral (see far right in time-lapse above) mushrooms from pre-made grow kits and our own coffee grounds - and they have sold out in a heartbeat. Needless to say that these freshly harvested mushrooms taste incredible. We’re still learning every day and now it’s time to ramp up production to meet the growing demand of an excited WRL community, friends and family.
